Press Release
PORTLAND, Ore (October, 2022) – Zupan’s Markets has partnered with local cidery Bauman’s Cider Company to develop the 21st beverage in their Farm-to-Market lineup: a Barrel-Aged Estate Heirloom Cider. Tropical, citrusy and smooth, this cider begins with barrel-aging a blend of Golden Russet, Yarlington Mill, and Porter's Perfection heirloom apples for a year. Freshly harvested Gravenstein apples are then added for the perfect, bright finish. A delicious fall beverage, this cider pairs well with a charcuterie board with cheddar or blue cheeses, hearty grain salads, roasted root vegetables and even pumpkin soup.
“Zupan’s Markets continues to partner with innovative local makers to create new and unique offerings for our Farm to Market lineup,” said Zupan’s Markets President and CEO Mike Zupan. “Over the past couple of years we’ve seen the popularity of cider increase in the Portland market and are excited to be presenting our customers this barrel-aged specialty blend.”
Bauman’s Barrel-Aged Estate Heirloom Cider is exclusively available at all three Zupan’s Markets locations in single 16 oz cans for $7.75.
Bauman’s Cider Company individually ferments single varieties of apples, both from their own orchards at Bauman’s Farm and Garden, as well as from other local farms. The cidery then selects from batches that are aging in tanks or barrels to blend their own special orchard cuvees.
“This collaboration with Zupan's Markets was especially fun to combine our barrel-aged juice with some wonderful cider fruit cultivars that had a lot to bring to the table,” said Christine Walter, Bauman’s Cider Company Founder. “We blended them with fresh Gravenstein juice, just picked and pressed which resulted in a zingy blend with integrated tannins.”
Farm to Market Profile: ABV 6.9%
Tasting Notes: Bright notes of Meyer lemon and tart apples, edged with soft aromatics of vanilla
Food Pairing Notes: Complements a wide range of fall flavors and dishes including Gorgonzola and blue cheeses, cheddar, hearty grains such as quinoa and farro, mustard, walnuts, fennel, pumpkin and winter squash, roasted parsnips and other root vegetables.
About Bauman’s Cider Company
Bauman’s Cider Co. is led by fifth-generation farmer and head cidermaker, Christine Walter. Christine’s foray into cider making began after she learned that her great-grandfather Stephen was known locally for making cider on their farm for friends and family. She approached her new endeavor with intentions any purist would be envious of, using only fruit grown and harvested on their farm. Today, her ciders are still made with this ethos in mind whenever possible. With product lines range from accessible favorites like Loganberry, Clyde’s Dry, and Peach Raspberry, complex and nuanced single varietal ciders like McIntosh, Mountain Rose, and Muscadet de Dieppe, and unique limited release ciders, Bauman’s continues to attract new consumers to their unique and approachable products.
